Can I control the water flow (more or less water) with this trim?

No, the 14 series can only control temperature. The 17 series trim kits can control volume and temperature independently.

Can you still use this if you only have 2 functions? Ex rain shower and hand held.

Our Delta Faucet T24943-KS is a 6-setting diverter. I recommend using T24843-PR which is a 3-setting diverter for 2 accessories. Please see the link below.

Can I turn the shower on with this? Do I use the top knob to do it? The 6 functions are confusing.

The Delta Faucet model T24943-PR Two-Handle Monitor 14 Series Valve Trim With 6-Setting Diverter In Lumicoat Chrome bottom handle can be used to control the temperature and flow and the top handle can be used to divert between 3 separate components. There are 3 shared settings for each component to be shared with a second one and 3 non-shared settings so they can each be used individually.

Can one of the functions used for a tub spout?

Thank you for your question, I would be happy to help you.
A tub spout can be plumbed from the diverter but we do not recommend it. The tub spout under normal installation puts out 8-10 GPM, when plumbed from the diverter it only puts out about 5-6 GPM.
