Thank you for your question. The wand of the Delta Esque Bar/Prep Pull-Down 9981T-DST faucet, will stay in the same setting, that you choose, when the water is turned off and on.

Is there an available replacement aerator for the stock one that has a higher flow rate? The one that comes with this faucet is very restricted.

Thank you for your question. At this time, we do not have an aerator option with a higher flow rate for the Delta 9981T-AR-DST Faucet. This faucet provides a flow rate of 1.80 gpm @ 60 psi.

would it work in manual mode if touch2 system stops working?

Thank you for your question. The Delta 9981T-DST faucet can work in manual mode by removing the solenoid from the faucet underneath the sink. To remove the solenoid, have the handle in the 'off' position. Have a bowl/bucket underneath the sink to catch any excess water that can come out at the connections. Remove the two blue clips on the bottom and the top of the solenoid assembly. Remove the hoses from the solenoid and connect the two hoses together. Secure this connection with one of the blue clips.
